It seems DOS's COPY command can't do that. But rather than typing so many paths in one COPY command, it's actually more convenient to COPY them one path at a time!

COPY under DOS isn't that powerful.
In fact, even within one directory it can't copy multiple types of files, unless you copy all files over.

The COPY command can't do it, but GNUish DOS command CP can, for example:
CP C:\*.EXE C:\*.COM .
