The options in the startup menu of CONFIG.SYS are all set by oneself, and there are no fixed options. The variables in AUTOEXEC.BAT are also set by oneself, just some system environment variables such as PATH and so on. And these variables can also be set under the DOS command line or in other batch files.

For example:

MENUITEM=A,Option A
MENUITEM=B,Option B
MENUDEFAULT=A,10

Among them, is for creating a menu, and and are for the functions to be executed after selecting the corresponding menu.
The MENUITEM command is used to create menu items, and the MENUDEFAULT command is used to indicate the default selected item.

Yes. But IO.SYS is not like COMMAND.COM, because modifying COMMAND.COM may cause the problem that different COMMAND.COMs cannot be used with each other, while IO.SYS has no such problem.
