I mean without loading ucdos, pdos95... adding a Chinese input method into a program you write yourself.
Most people can display Chinese characters without loading a Chinese character support system, but if you don't load a Chinese character support system, how do you input Chinese characters?

Why is it that nobody ever adds a Chinese input method into their own programs (separate from Chinese character support systems like ucdos, pdos95, etc.)?

Yes, there is, QBWIN had it long ago! They're all made into subroutines, providing QLB and LIB, take a look.

I just don't want to call other people's library files, I want to learn it myself, that way I'll have more freedom when programming!

Using an input method under DOS requires fonts
The fonts generally store dot-matrix information

In graphics mode (or by writing directly to the screen), read the Chinese fonts (Chinese character codes), and write to the screen.
Then write a keyboard code-reading module, and once you connect them to your software, that's it.
