A round manhole cover can keep itself from falling through, which a square one can't do. It's also very convenient when installing and opening it, and round manhole covers use the least material.

Also, when workers do repairs, going up and down is very convenient, and a round shape can withstand a lot of pressure, so passing vehicles won't crush it. If it were square or rectangular, that would be quite dangerous.
