As for CONFIG.SYS configuration, you can make some menu options, for example:
MENUITEM=A
MENUITEM=B
..
..
and so on. For specifics, see the various MS-DOS 7.10 boot disks we made.
ERRORLEVEL is the error return value; you can use COMMAND /Z to check it. For more detailed information, you might as well look at the related tutorials in the "Getting Started with DOS Learning" section.
A 2.88MB floppy disk image needs a 2.88MB boot sector (Boot Sector). Just write the corresponding data into it.
As for CAB extraction losing files, that's because if the FILES value in CONFIG.SYS is too small, it will affect normal operation.
UMB memory is of course very good. The various DOS boot disks people made on the forum often use software like EMM386 or UMBPCI to provide UMB memory. As for some people outside the forum not doing that, I guess it's because they aren't very clear about it..

but i still don't know how can boot my computer with step by step function, not the menu choice functioin. would you please tell me how i can do that? i used to read lots of your boot disks but i cannot find something about that.

I don't often use EMM386 and UMBPCI mainly to improve floppy disk compatibility, because in most cases there is no problem after adding them, but on a small number of machines it will fail to boot. For someone who regularly repairs machines, compatibility is still more important.

I don't have a phone line at home so that i have to connect to the internet at the library of my campus, and all of operating systems there are english win2k, students are only guest users so that i cannot install any software on it, even a chinese input.
above i said that " you are my hero " as you told me all i wanted to know, so i thank you so much.
