I already changed SPFDISK last time into a text-mode Simplified Chinese edition without built-in fonts. There is a download in this section. But if you want its built-in Chinese character support system to display Simplified Chinese, then files like FONTDATA.C would need to be modified, and that doesn't seem so easy..
