I searched for quite a while and still couldn't find it.

It seems to be some corresponding encoding (I saw it on Baidu Knows), but I still don't know what encoding it actually is.
ASCII or ANSI? And I also don't know how to write it.

You need to explain the environment where your echo command is running, whether it's under pure DOS or under cmd.

Put a ^ in front of it。。

For example, echo abcd^>efg>a.txt

Then the contents of a.txt will be

abcd>efg
