After removing it, it simply hangs right at the menu, and I can't even see the LOGO anymore. Does that mean my machine can only run without loading EMM386? But if I load only HIMEM, will that be very bad for memory management?

Then try adding it. EMM386 may have some compatibility problems with a few systems.

UMBPCI will load all programs, including HIMEM, into upper memory.
If neither EMM386 nor UMBPCI works, then you'll just have to try something like QEMM386.
